You Will Need:
- 230g Self Raising Flour
- 230g Caster Sugar
- 230g Butter
- 4 eggs
- 2 limes
- 50g Icing sugar
- Preheat your oven to 180 (fan) (gas mark 6 / 200C) and grease a cake tin.
- whisk you egg whites with half the sugar until it's basically a cloud.
- cream together your butter and sugar.
- add the egg yolk and flour in 3 parts simultaniously.
- juice 1 lime and add that in.
- fold in the eggwhite and sugar mixture and pop in your baking tray.
- Bake for 20-30 minutes.
- combine the juice of 1 lime and the icing sugar and drizzle over the cake once it has cooled.
- eat and enjoy.
